From Rust to Roast
In early 2022, we found an abandoned Sinclair horse trailer nestled in a corner of a Borders farm. It wasn't much to look at—layers of flaking paint and a floor that had seen better days—but beneath the rust, we saw a vision of the ultimate al-fresco kitchen.
The transformation was grueling. We stripped it down to the bare chassis, spending cold Scottish winters grinding away decades of oxidation. Every weld was done by hand, every piece of food-grade stainless steel fitted with millimeter precision. We didn't just want a food truck; we were engineering a high-output culinary engine.
Integrating heavy-duty gas griddles and custom refrigeration into a vintage frame required more than just labor—it required heart. We balanced the weight, optimized the flow for three chefs, and ensured that even in the middle of a festival rush, we could maintain the highest standards of hygiene and speed.
Today, ProjectTaco stands as a symbol of grit and local flavor. It's a mobile hearth that brings the Borders together, proving that the finest tacos don't need four walls—just the right trailer and a lot of passion.
