ProjectTaco is Aresky Bandera’s small, independent food trailer. Built after work and shaped by a year of cooking, testing, and learning.

The recipes are still being refined ahead of our first service. Here is what we are preparing.
From the griddle
Tacos
Pork al pastor, chicken, and vegan tacos, served across the menu with house-made green salsa, red salsa, and pico de gallo.

Loaded nachos
A generous tray of loaded nachos, with the final toppings being tested before Peebles Bonfire.

Carlota & leche merengada
Sam’s Carlota de limón recipe, plus chilled leche merengada served as a dessert drink.
Behind the trailer
One old trailer. A year of learning.
Aresky bought a modified Williams horse trailer in October 2025. It leaked, it was rusty, and almost everything inside had to come out. He rebuilt it during evenings and weekends while learning the skills each stage required.
